01Grapes arrive chemically ready

Unlike many fruits, grapes can carry enough sugar and acidity to ferment without extensive preparation. 03Yeast turns sugar into wine

Yeast converts glucose and fructose through glycolysis, producing ethanol and carbon dioxide while releasing heat. It also makes glycerol, organic acids, and aroma compounds. Temperature, nutrient supply, oxygen at the beginning, and yeast strain influence whether the result is crisp, fruity, earthy, or volatile.

04Skin contact builds structure

05Clarification changes the liquid

After fermentation, wine contains yeast cells, grape particles, and unstable compounds. Racking transfers the clear portion away from sediment. Fining agents can bind haze-forming molecules, and filtration removes particles. Some producers leave more material in suspension for texture; others pursue bright clarity.

06Maturation is slow chemistry

Oak can add tannins and aromatic compounds, while oxygen entering gradually through a barrel or closure changes color and softens some harsh sensations. Stainless steel preserves fruit and acidity. The vessel does not make a wine good by itself; it changes the rate and direction of reactions.

07Bottling preserves a moving target

Wine may continue evolving after bottling as oxygen, sulfur compounds, acids, tannins, and aroma molecules reach new equilibria. Temperature matters: heat accelerates reactions, while light can damage sensitive compounds. A finished wine is therefore stabilized, not frozen in time.
